Appetizers

Four pieces of sushi are laid out on balls of sweet short grain sushi rice. The carefully prepared tuna is prominently displayed with its purposeful crosshatch of slices and cut against the grain. Next is the salmon with its smooth texture and thin lines of savory fat. Beyond are two indistinct pieces of fish, a white tuna and a red snapper (but more often one will be replaced with a sweet shrimp tail). The plate is garnished with a nickel sized ball of spicy wasabi and a larger pile of neatly folded pickled ginger. Each nigiri piece has a half slice of lemon laid against it to add a tart flavor if desired and contrast the nigiri itself.Fried GyozaMonkey BrainsEdamame
